I started the day with an air of excitement because it was going to be my first time ever cooking lasagna. This would be no big deal if you didn’t know how much I love lasagna. The only one who likes lasagna more than me is the cartoon cat, Garfield, and even that is a toss up.
First on the agenda was doing actual work. I wrote two reports. I also renewed my home care aide registration, which is needed every 2 years. I can’t believe I worked for the same company since 2018. Then, I submitted evidence of a pen pal correspondence as part of my doctoral program. When my pen pal wrote to me (see below), I got overexcited and sent back my favorite chocolate, fancy calligraphy, and beautiful stationery to boot. I never got an answer.

I don’t mind; part of the assignment was seeing how we interact with people who may have compromised memory or cognitive impairments, so I just hope that this person enjoyed the snack I included. This blog post is very food-centric, isn’t it?
After that, my sister and I spent over 2 hours in the kitchen cooking two! different! lasagnas!

Why so much effort, you may wonder. Surely not for the joy that cooking inspires (I’m no Gordon Ramsey). Well, today was a special day because I had a gift exchange and belated Friendsgiving planned with two of my close friends. My sister cooked one of the lasagnas, so naturally, she got to participate! As I type this, I am wearing a fluffy pair of sweatpants and fluffy slippers that each friend gifted.

We had a blast together. At the end of a well-spent evening, I retired to my room to finish up that second report of mine. And that concludes my day!
